]]>But what is fasting and how can you get started? We’ve made a simple guide that helps you understand the basic principles of fasting and what you should be aware of before you start.
Intermittent Fasting (IF) is an eating pattern where you cycle between periods of fasting and eating. It is used to describe several different approaches to the short-term abstention from food, which have shown to have several potential benefits. Fasting is not the same as starvation and calorie restriction and you should focus on when and what to eat.
Several physiological things happen in the body when you fast. The human growth hormone levels in the body increase and insulin levels decrease. Intermittent fasting has shown to impact changes in body composition and stabalizing the glucose levels and some people (can) use it as a weight loss strategy.
There are several different ways in which you can do intermittent fasting with one thing in common - they all split the day or week into periods of eating and fasting.
Here are the most common methods at different levels:
Beginner method
The 16:8 method: Ideal if you’re completely new to fasting, as it invites you to skip breakfast (and/or lunch) and restrict your daily eating window to 8 hours and fast for the rest of the time (16 hours).
Tip: the easiest way of implementing this method into your daily routine is by skipping breakfast and trying not to think about previous or next meal. However, it doesn’t matter when you start your 8-hour window.
If you think this was a little too easy, try and restrict your daily eating window to just 4 hours - known as the 20:4 method.
Intermediate/experienced methods
The 24-hour method: If you are already familiar with the 16:8 method and it felt good during it, you could try to work your way up the 24-hour method where you also skip lunch and dinner. Then, when you have tried it a couple of times, you preferably do it every 1-2 weeks.
If you’re more experienced with 24-hour fasting, then perhaps you could do a 24-hour fast up to three times per week (as shown below).
The 5:2 method: With this alternative method, you consume a very low amount of calories (500-600 calories) on two non-consecutive days during the week, but eat normally for the remaining five days.

Is fasting dangerous? If you are healthy and well-nourished, there is nothing dangerous about not eating for a while. You might be hungry, feel a little weaker and your brain may not perform as well you’re used to but this is only temporary until your body adapts to your new eating pattern.
Can I exercise during a fast? Yes! Some suggestions could be walking, yoga, or other light exercise.
Can I drink liquids and beverages during a fast? Yes, you can drink water and black and herbal teas (limited). Do not add any artificial sweeteners or lemon to your water though.
Can I take my supplements while fasting? Yes, you can. However, some supplements may work better when taken with meals such as fat-soluble vitamins. You should be aware of the calorie content contained in the supplements to not break your fast. The number of calories contained depends on the specific supplement.
To sum up, intermittent Fasting is great for some people, but not everyone. Try it out and see how you feel. If you find it easy to implement in your daily routine and feel good while doing it, it can be a powerful tool to improve your lifestyle.

Quality: Mental balance can help to emphasize fulfilment, gratitude, appreciation, and joy in such a way we are better equipped to realize our potential.
Sustainability: Taking care of your mental health, will help look after your general well-being
Natural: We think, the most natural way of getting mental balance is through thoughts. Being more forgiving towards yourself, contemplation and doing less it better than using stimulants.
Variation: You can recharge our mental batteries the best with different techniques, and we should choose the one that fits us best in any given moment. Winding down with meditation, mindfulness, being in nature, listening to your favorite music, read a good book or socialize with friends and family time are all great ways to recharge your batteries.
When the World has you overwhelmed and you try to keep up with it all, it’s important to find balance between being present all the time and shutting off the outside world. Meditation can help you with that – and anyone can practice it.
It’s simple, inexpensive, doesn’t require any special equipment and you can do it almost everywhere – on a walk, before a meeting, while waiting for an appointment or in bed before you go to sleep.
There are many benefits of meditation, but in short, they can help to clear your mind and bring a sense of calmness, peace and balance to your mind and body – which you can carry with you through your day.

]]>So, if you want to improve yourself both physically and mentally, it’s worth thinking carefully about the quality and quantity of your down-time. Our latest blog post is all about recovery – to help you understand why rest is so important and what recovery is to us.
Even though the human body is a biological machine designed to be used, worn and pushed, it also needs periods of restoration in order to recharge and rebuild. Unfortunately, recovery is often getting overlooked and forgotten.
But it is scientifically proven that recovery or down-time does not jeopardize performance and well-being. In fact, in order to get the full benefit of physical activity and create balance in your everyday life, the human body also needs sleep and rest.
The way people feel when active also depends on what happens during rest or sleep. And even though recovery doesn’t always mean doing absolutely nothing, the importance of sleep quality or listening to old records and relaxing should not be underestimated.

Variation: There are two types of recovery; passive and active. For active recovery, try yoga, walking, swimming, stretching, massage, soft tissue treatment or mobility.
The best form of resting is sleep as your brain restores and your body follows suit. Even though this is obvious, so many of us do not get enough good, quality sleep.
To encourage healthy and consistent sleep, try to think about your sleep-and-wakeup schedule, pre-bedtime routine and bedroom environment using our simple guide below.
If you don’t already have a sleep routine, implementing all of these “strategies” can be overwhelming but remember that it’s not all-or-nothing - you can pick and choose (or combine) the ideas that appeal to you the most. If you start with small changes and work your way up toward healthier sleep habits, then it’s more likely that it actually will become a routine.

Quality: Whether winning Olympic medals, doing CrossFit, or taking a long walk, a healthy life is an active one. Quality of movements with proper form will keep you injury free and give you better results.
Sustainability: Find a level you can maintain in the long run, with a proper rest-to-work ratio. It needs to be fun and entertaining. You could get a gym buddy and socialize at the same time – physical activity should not feel like a burden, but a pure joy.
Natural: Natural movements, such as calisthenics and functional movements, are how your body is designed to move through our revolution.
Variation: Your body adapts to the stimuli you expose it to, so to keep making it more flexible, stronger and agile you should mix it up. It can be anything from gardening to a triathlon, or a game of curling with your friends.

]]>Magnesium is an essential mineral for the human body - it’s vital for sustaining and supporting health and life. It is involved in over 300 processes and activities in the body, including the energy metabolism and synthesis of proteins to name a few. Magnesium is especially important in the physiological function of the brain, and also the function of the heart muscle, and skeletal muscles. Magnesium is distributed throughout most of the body and is mainly stored in our bones and muscles. Magnesium food sources are primarily leafy greens, and foods such as unpolished grains and nuts also have high magnesium content, whereas meats, starches, and milk are more intermediate. An example is that 1125-1500g of kale is equal to one daily dosage (3 capsules) of Puori M3 magnesium. The adequate intake (AI) is 350mg/day for men and 300mg/day for women.
We all want to feel energized and full of energy every day, but unfortunately that is not always the case. Everybody knows the feeling of tiredness or even feeling fatigued sometimes and it is completely natural to feel that way.
Nonetheless, there are some factors that can make the lack of energy last a bit longer than it should. It could be due to a lack of sleep, a busy schedule, an illness, inadequate energy-intake, poor diet, or a lack of some vitamins or minerals. This is especially interesting when we are talking about magnesium. Magnesium is as mentioned involved in over 300 processes in the body playing a vital part. One of magnesium’s most crucial roles is the energy metabolism. Many of the molecules that are important in the activation of energy in the body is highly dependent on magnesium. Therefore, magnesium is important for the energy-yielding metabolism and can help reduce tiredness and fatigue, especially in situations of inadequate micronutrient status, making this a mineral that you need to be aware of when you want to feel your best and maintain and support your energy metabolism.
Being active is a part of a healthy routine that we all should strive towards, whether it is walking, biking, running, yoga or general fitness. The important thing is that you get your body moving. When you are active, your body creates heat and to cool off, we sweat. The sweat will not only excrete water, but also some of our important electrolytes and minerals, including magnesium.
Magnesium is the second most abundant cation (+) and plays a huge role in the mineral balance alongside sodium (Na+), potassium (K+) and calcium (Ca2+) as the most known ones. Magnesium deficiency is known to lead to secondary electrolyte disturbances, which makes magnesium substantial to maintain a normal electrolyte balance in the body.
Keeping your bones healthy and muscles well-functioning is important to maintain an active lifestyle. These are two major companions throughout your life, and you want to keep them in shape for as long as possible.
Magnesium is important for the maintenance of normal muscle function. It supports the vital energy production in muscles, but also functions as a calcium regulator in muscle cells. Calcium makes muscles contract but when magnesium is replaced with calcium, the muscle relaxes. This regulation of contraction and relaxation of the muscles is a fine balance and a crucial part of the normal muscle function. The muscle relaxation effects of magnesium are very important functions and contribute to maintain normal muscle function.
Bones give us our structure and are the foundation of our body statue and we want to help keep them as strong as possible. It is estimated that 50-60% of the magnesium in the body is stored in our bones. From here magnesium is highly regulated and released to the body if we need it and stored again. When we think about bone health, we primarily think about calcium, phosphor, and vitamin D perhaps K2. This is also true that these nutrients are extremely important in terms of bones status. But alongside calcium and phosphor, magnesium is a crucial part of the bones structure and magnesium deficiency have also shown to decrease bone strength and have further implications on calcium and vitamin D in the body.
As you can see from the above, magnesium as a mineral, and potentially as a supplement, needs some more attention – because it matters that you feel your best – and if you lack magnesium in your diet, a magnesium supplement may give you some support.

The 9-hour time difference between colleagues on the US West Coast and in Copenhagen is no hindrance for the women of Puori to connect and share experiences.
It seems like keeping up with the latest diet trends, health and appearance have become social expectations as many of us may have been negatively affected or felt pressured at some point in life by the “perfect pictures” we see on social media. With this in mind, what can we do in order to feel our best, both physically and mentally?
Janni: It’s really important you don’t try and do everything that society or social media tells you to do. The best advice I can give - and it’s a little cliché - but it’s simply to do what fits you. If you don’t like running, don’t force yourself to run 5k!
The keyword is “balance”. It’s ok if you skip a workout or can’t eat healthily all the time. That’s something I also tell myself.
Celine: I agree with Janni’s comments but for me, it’s also about being comfortable in your own skin and loving yourself. It all starts with that. I’m not a cross fitter – I’m 109 years old!
[Laughs]
I'm not built to be a cross fitter but I do love hiking, climbing and swimming. When I need to rest, I usually watch sports or take a nap. You need to be happy to take on your responsibilities in life.
Tina: I agree. It’s important to listen to your body and focus on what’s most important in your work and private life.
If you try to achieve everything at the same time, it’s very likely that you’ll become stressed and achieve nothing.
Michelle: Exactly! Saying no to something is often also saying yes to yourself which maybe helps you feel more aligned with who you are and who you want to be. Have you ever achieved something that you thought was impossible because you're a woman?
Janni: Honestly, I don’t think my gender has stopped me from achieving the things I wanted, nor have I ever used my gender as an excuse.
Tina: I feel the same way as Janni. I think we are so lucky to be born in a country like Denmark where there’s good gender equality. It’s more about having the right competencies and the courage to try to reach our goals. We know that salaries aren’t equal, so there are still things we can continue to fight for.
Celine: Things were a little different for me growing up in the Philippines. You couldn’t talk about sports with men as they would stereotype women. I was very close to my father, and he told me: “If you can dream it, you can do it.” So just like the two ladies, it didn’t even cross my mind.
According to this research, the share of women in senior management is increasing globally, but the proportion of women in senior leadership positions is still lower than men worldwide. It seems like we still have a problem?
Tina: During my time living in the UK, I noticed there seemed to be more males in those senior positions. It made me think how for me, Denmark is quite culturally and socially different so perhaps that could influence level of gender equality in other countries?
Janni: That’s true. It makes me think about inequality in everyday life. There will still be some stereotypes out there who think girls only eat salads and can’t lift stuff.
Celine: As a woman, I agree that it feels good when you are able to climb the corporate ladder, break through and speak up in those male dominating environments.
Michelle: As we have been celebrating International Women’s Day well over a century now*, it seems you all agree that there is still a battle to be fought across the World, but luckily we continue to see more inspirational women. So, what qualities do the women who inspire you have in common?
Celine: The women on my list are strong, independent and very resilient. My grandmother had 9 kids and during the old days, women were told not to work. So, I wonder how she was able to raise all those wonderful human beings and not have any work skills? But she found a way and has always been one of the strongest women I look up to. You don’t go through hard times if you are not strong and resilient.
Janni: I very much agree with Celine, but those who inspire me are those who are not afraid to talk about the things they’re struggling with. When Sofie Linde (Danish television host and writer) was pregnant, she was the first I heard say; “this is really hard and not fun at all” - showing it’s not a weakness when admitting things aren’t always perfect.
Michelle: So, do you think vulnerability turns into a positive thing?
Janni: Yes, but you also need the confidence to talk about it. I think that’s very inspiring, especially when everything has to be so “perfect” on social media. I just like the honesty.
Tina: Three qualities come to mind. One is hard-working because things don’t necessarily come easily. Next is to do things differently. You don’t have to follow the footsteps of what others are doing to do things differently to succeed. Lastly, be honest and trustworthy.
There are definitely a lot of women who continue to inspire us on a daily basis - to keep going, try harder and push through, which made us think - what is the best part of being a woman?
Janni: That’s a tricky one again. I don’t see the things I love related to me being a woman but being related to me being me.
Celine: For me it’s being able to be called mom. It’s a privilege to be able to say that.
Tina: I feel the same - for me that’s very special.
A lot of great reflections have been shared throughout this conversation and it seems like it all comes down to simply being human rather than being a woman. What’s more important than your gender is your personal competencies; the ability to be honest with yourself and your surroundings, to not be afraid of speaking up and to support one another when times are tough in life.
Of course, we’re all different and these are just our own personal reflections on some of the battles and struggles we face in everyday life. Add 1 1/2 banana to a blender along with the rest of the pancake ingredients and blend until smooth. Slice the remaining banana into thin rounds.
Heat a little oil in a 20 cm non-stick frying pan on a medium-high heat.
Pour three little pancakes into the pan. Add 1-2 banana slices on top of each pancake. Fry for about 1 minute, or until small bubbles appear on the surface and the bases are golden. Carefully flip each pancake with a thin spatula and fry the other side for a further minute or until golden. Luise: I have a holistic approach to my life and achieving balance is the key to getting all parts in sync - but I guess this is also the biggest challenge. Life happens, and you can’t always control the curveballs that are thrown at you. But you can choose how to tackle them and recover.
Like Cooking from scratch for example - it can seem daunting, but it doesn’t need to be complicated or time consuming. My advice would be to keep it simple and find some go to recipes that you make part of your routine. You can often adapt these according to what's in season and alter them to meet your needs.
I also like to squeeze in a lunchtime exercise class as often as I can get away with it. Pilates Reformer, Mega-former or Barre classes have become my absolute favorite workout ever since our time staying in Australia 6 years ago, andI go out for a power walk every day, either with the kids on kick-bikes or during work hours when I’m doing a phone meeting.
David: I often end my busy days with a late night workout when the kids are asleep, mostly functional weight training at the gym closest to our home. And you always find me biking from one meeting to another at a fast pace. Whenever I have time I play tennis, single or double it doesn’t matter, I have been playing since I was a kid and still love it.
David: Looking back, the biggest achievement is the entire Green Kitchen journey. We started a small blog out of a passion for green cooking and turned it into a worldwide community and jobs that we both can live on. This includes fun tasks like writing cookbooks that are used in people’s kitchens all around the world, creating recipe videos and collaborating with like-minded brands. 1. Set the oven to 180°C/350°F.
2. Place the pumpkin puree in the food processor along with the rest of the wet ingredients and mix until smooth.
3. Add all dry ingredients to a bowl and stir to combine.
4. Pour the wet mixture into the bowl with dry ingredients and gently combine.
5. Place baking paper in a rectangular bread dish or baking dish or grease it with oil.
6. Pour the batter into the dish and bake on the middle rack for 45 minutes. The cake is ready if an inserted toothpick comes out clean.
7. Let cool on a wire cooling rack.
Set the oven to 180°C/350°F.
Divide the butternut pumpkin in half and place in the oven – cut side down.
Let roast for 30 minutes or until the flesh is soft.
Measure out 300 g / 300 ml / 1 1/4 cup of pumpkin flesh and blend until completely smooth. It's roughly one half pumpkin (save the rest in a jar and add to sandwiches, pasta or smoothies. Or simply make one more Pumpkin Bread).
For a delicious vegan option simply omit the egg and use aquafaba. Once you have combined the wet and dry mixes (step 4) pour the liquid from one tin of cooked chickpeas into a large clean bowl. Use an electric hand whisk to beat the liquid until you have stiff peaks. Gently fold this through the cake mixture and continue with step 5.
]]>A plant-based diet is becoming ever more popular due to its health, environmental and ethical benefits. Whilst eating more plants definitely provides the body with higher levels of antioxidants, fiber, and certain vitamins, specific micronutrients are often lacking in a plant-based diet compared to an omnivorous diet. One of those micronutrients is vitamin B12.
Vitamin B12 is an important water-soluble vitamin that is used to make red blood cells. It is found naturally in foods like eggs, fish, and red meat, in particular organ meats like liver and kidneys. Although certain meat-free foods are fortified with B12 it is not uncommon for someone on a plant-based diet to be deficient in vitamin B12 (1). More worryingly, a deficiency can take years to develop.
It is extremely difficult to get B12 from plants. Research suggests that fermented soy products such as tempeh, seaweed, and certain mushrooms (e.g. Shiitake) may have a very small amount of B12, but you would have to eat a huge amount of them in order to meet your daily requirements. To give you some perspective, 100g of shiitake mushrooms contain only 1.3–12.7 μg/100 g dry mushrooms (2)
Vitamin B12 plays a key role in the body, in particular keeping our nerves and blood cells healthy. Deficiency of vitamin B12 can lead to a type of anaemia (inaccurately often thought of as a condition only caused by iron deficiency), known as megaloblastic – meaning the body produces abnormally large red blood cells.
Symptoms of megaloblastic anaemia are fatigue, a change in bowel habits, and an enlarged liver, as well as a tingling or burning sensation on the skin. Shortness of breath is also a classic symptom.
In cases of extreme B12 deficiency, individuals can actually develop potentially irreversible and severe neurological disorders (damage to the nervous system and brain - such as psychosis, mania and dementia) as well as an increased risk of heart failure. So, as you can see, B12 is a really important nutrient and whether you are getting enough should be considered when eating a plant-based diet (3).
B12 is also particularly important in those who exercise regularly, as the large red blood cells caused by megaloblastic anaemia are less efficient at carrying oxygen than their healthy counterparts. For that reason, if you want to perform your best in high intensity or endurance exercise you want an adequate store of vitamin B12 in your body.
